Can anyone tell me about the best type of lavender to dry? How and when (stage of plant) to dry it? Thanks.
Take a look at the article on GardensOnLine on 'Drying Herbs". https://www.gardensonline.com.au/GardenShed/Articles/Show_26.aspxx I know lavender is not a herb but everything in there applies exactly the same. The best time to dry lavender is just after the flowers have gone past their best - not totally dead but just going over. I'd recommend Lavandula angustifolia - English Lavender as the best for pot pourri.
