Tagetes lucida or Mexican Tarragon is a fast growing, bushy annual with strong-smelling leaves around 6-7cms long in a mid green colour.
Clusters of small golden yellow flowers are produced in late summer, held aloft on stiff stems.
It is a good source of yellow dye and is useful as an incense to repel insects but its main use is culinary as a substitute for Tarragon.
It has a sweet anise sort of flavour which is quite delicious as an infusion while also going well in salads, fruit salads and with fish and chicken dishes.
